IMHO elder is one of the least tasty offal cuts. I suspect you have to do funky things to bring it round, but hey, it's still meat and you don't want to be wasting it right?

What are you thinking? Slow cooker 12 hours or so to soften it up?

Although I think the same amount of time in a smoker will make even the toughest stuff tasty.

Would you believe it, I'm getting an air to water heat pump fitted next week. I'll ask them if they have any of the coil cleaner that I can have .  :winkthumbs:
